So I'm wondering how the choir of menoth works do I need a certain number to field them? I notice they come in either a set of two or a war priest and an alcolyte? Is two all I need to start?

You need 1 War Priest and 3 Alcolytes for a total of 4 for min unit. Then 2 more Alcolytes for max unit.

You will need the pack with the priest and acolyte plus another pack with 2 acolytes to field a minimum sized squad. You can pick up another pack of 2 acolytes for a maximum sized squad.
Until you start playing larger games with a large number of jacks (say more than 4 jacks) you shouldn't need more than one choir. Later on, you can get two more choirs (4-6 models each, following the above priest plus 3-5 acolytes formula).
To be clear, choirs come in units of 4 or 6 models, one of which will be the priest, the remaining models being acolytes.

The Choir of Menoth provides some of the best Jack Enhancing abilities in the entire game.
The choir has 2 defensive abilities and 1 offensive ability depending on weather you plan to deliver the pain or survive your opponent's next activation will be the most vital decision you will make when deciding "what do I do with these guys this turn?"
You'll want to keep your choir behind your Warjacks throughout most of the game, In order to receive a choir buff a member of the unit must be within 3" of a warjack you want buffed at the end of the choir's activation. Keeping your warjacks between the enemy and the choir is vital as (and trust me on this) your opponent KNOWS how effective the choir can be, so you'll want to keep them somewhat protected.
Early in the game (and depending on your opponent) you'll probably want Shielding (which makes your Warjacks Untargetable by spells) or Passage (untargetable by ranged attacks) up on your Warjacks. Keep in mind that "untargetable" does not mean "Immune" and that Passage only works against Non-magical ranged attacks (so, no help against those pesky :Magic-Wpn:gunmages). Also remember that a choir's prayers do nothing to protect the choir themselves (so a Cygnar player could target a choir-boy then arc that lightning over to that Redeemer you've got standing within 3".
Remember that the choir must pick a single buff to apply to all warjacks in range, and can only buff one warjack per member of the unit. Working (in a practical fashion) like this;
1.) Activate and move your choir members toward the jacks you want to buff.
2.) Choose one of the buffs.
3.) Measure range from indiviual choir members to the warjacks you want to buff, it's only 3", so make sure your boys are up-close and personal.
4.) One jack buffed per choir member (think of it like the choir member as "casting a spell" on target friendly warjack).
If you're planning on using Infuse (+2 to attack and damage rolls) then you're going to want to activate your choir prior to activating your warjacks to get the maximum benefit. The Protectorate as a whole is rather unforgiving on order-of-activation mistakes, so try to mentally plan out your turn before activating your first model.
Hope this gives you a bit of "good advice" on using your choir, you'll probably soon be shoving them into any list you can (Menoth knows I do!).
