How does Menoth deal with stealth? I am currently building a few lists and can no figure out the best way to deal with these sorts of units/models. Suggestions?

Visgoth Rhoven and co are a single target option as they allow one friendly model to ignore stealth.
AoE's are generally how I get around it as most (save for Shadowmancer Goreshade) units/models with stealth have high def low armour so the Redeemer and Vanquisher tend to do quite well in stopping them.

The Stealth offenders that jump out in my mind are - Bane Thralls, Tartarus, Deneghra, and Stalkers - in that order that I figure I need to counter them in my lists.
To counter Stealth you either include Rhoven and/or have a good melee counter, that couldn't care less about Stealth. Stealth is one of the reasons I'm a strong proponent of TFG.
Rhoven are good if you have one model that you're relying on to hit Stealth'ed models - i.e. a Redeemer with the pKreoss pop n' drop, an arc node with a spell channeler, or maybe a ranged jack with eSeverius.
Rhoven is still an expensive option, though, even though I include his unit once in awhile primarily just to counter Stealth. For +2 points, you've got a full unit of TFG, which can also help you get around Stealth nicely. Either hit the offending model/unit or tie it up.
To Menites: Does anyone include Rhoven for anything other than to counter Stealth?

Mostly melee models or AoE.
It sort of depends on what exactly you are facing. If it is ranged Stealth, then run at them with TFG. If it is the melee stealth, then bait and counter charge. Or speed bump and counter charge.

That's all I include him for. A devout is a much better body guard.

Since Gaius and Cassian are Exemplars, they fit well into every exemplar-themed list, cause you benefit from synergies.
Negation is a strong ability against some Hordes-lists.
As relative strong individual models I also consider them in any list, that depends on Martyrdom or Resurrection (HR or Testament). Its much more effective so keep a low number of strong Individuals alive, then for ex. a TFG with 11 models.
But I agree that their anti-stealth-tool is the rmain reason to take or leave them.

I often take them for their furry/focus shenanigans, there is a lot of Krill stone activity in the local meta and being able to knock and inch off of that effect can really mess with and opponents plan.

I always include Roven & Co. if I'm going against Hordes and I'm not taking pKreoss. You can totally screw over Hordes fury management with them AND on the charge they can put the finishing touches on a beast.
Messing with fury management is so awesome.

I feel the same way here. I really only take him if I think I'm going to be up against Retribution. Even then, I hardly ever feel like they make up their points. If I'm using them offensively, they're not helping me deal with stealth. If I'm having them deal with stealth, they're not really helping me with their attacks.
But, really, what else are we going to do with those 4-5 points that so often seem to be left over?

When it comes down to it, we don't actually have a lot of models that care about stealth.
Errants don't get much use out of their Crossbows anyway, so they're not overly concerned.
The Sunburst is still an AoE, so it's not too bad.
The Vanquisher is also an AoE, and with the autofire the lower POW on the blast damage doesn't matter nearly as much.
Zealots never care about Stealth.
Redeemers and Deliverers barely care at all about Stealth, since they weren't expecting to hit in the first place. The only time it really matters is if you're paired up with Kreoss and want to get direct hits on his feat turn.
Reckoners and Idrians hate Stealth though.
So for the most part, I deal with stealth by not even caring that it is there.
It does mean you need to get the Arc Nodes a bit closer than they otherwise needed to be (about three inches closer typically), but it's not the end of the world.
