Are calvalry considered warrior models for the sake of spells and feats that effect warrior models and non-character warrior models? I know warjacks aren't.

Check out the very first paragraph under "Models-The Dogs of War" in the rule book, in the mini book it's on PG 11.

Warrior models are defined in the rule book. Cavalry can be warrior models, but as other model types can be cavalry as well (such as the Khador Gun Carriage which is not a warrior model) being cavalry doesn't actually make you a warrior model.

So, what is a gun carriage considered then?

Its considered a battle engine and a cavalry model. its not a warrior model.
