The newly released Afflictor Animus is Coerced Protector [Souless Warrior]

This model gains Sacrificial Pawn for one round. (When a model with Sacrificial Pawn [Souless Warrio] is directly hit by an enemy ranged attack, you can choose to have one friendly, non-incorporeal soulless warrior model within 3" of the model directly hit instead. That model is automatically hit and suffers all damage and effects.

When Eiriss2 hits someone with her ranged attack, she removes Animi and Upkeep spells from them.

Now Coerced Protector gives Sac pawn, and the wording of Sac Pawn seems to imply a retroactive change, saying that the original model hit was no longer hit, and now instead the chosen pawn is directly hit "instead" and suffers not only damage but effects.

However, would I be correct in assuming that if Eiriss hits a model with Coerced Protector, her hit would still trigger on that model...thus the model would no longer have Coerced Protector, and never get to Sac Pawn the hit off in the first place? Or does the owner of the model with Coerced Protector actually have the opportunity to use sac pawn and say that they were never hit, since the Soulless Warrior was hit instead, and thus don't lose any upkeep spells and the animi?

Yes. Yes they do. Step 7 of the attack timing sequence on page 237 of Primal happens before step 9.
