If my Scythean hits the same target with both of his initial attacks and triggers Blood Bath can I choose to cast my animus before resolving the attacks that result from Blood Bath?

Yes. It can't interrupt an attack, but can be done in between them, so you can force the Scythean to use it's animus after completing the second attack but before you begin the BloodBath attacks.

As long as you are not in the middle of attacking and rolling damage you are good.

You need to see each attack a model makes and each action it takes as a seperate setp in it's activation.
Before and after each of these setps there is a moment where the model is not doing anything so it can use that moment to cast spells/animi.
An action starts when you declare it and ends when all dice rolls involving this action are completed.(if dice rolls are involved ofc)

Completely fine, you just can't use it in the middle of making the Blood Bath attacks, since they are simultaneous.
