Dire Troll Mauler vs Winter Guard Infantry. Dire Troll Mauler attacks and deals fatal damage to Winter Guard Infantry grunt.

1. Will the WGI grunt still be allowed his Tough roll from Kovnik Grigorovich's Courage of the Forefathers?
2. Will the WGI grunt produce a soul token when he gets snacked? How about producing a corpse token?

There are three phases that a model progresses through when it has suffered damage equal to its remaining hit boxes: disabled, boxed, and destroyed.

When a model with Tough is disabled, you roll a d6 and on a 5 or 6 result, the model heals 1 point and is no longer disabled, which means it doesn't progress to the boxed stage.

If a disabled model fails its Tough check (or just plain doesn't get one), it goes on to being boxed.

The Snacking rule states that "When this model boxes a living model with a melee attack, this model can heal d3 damage points. If this model heals, the boxed model is removed from play."

Most (but not necessarily all) token-collecting abilities occur when another model is destroyed. If a model is removed from play by Snacking when it is boxed, then it never proceeds to the destroyed step.

In your example:

1. Dire Troll Mauler disables a Winter Guard Infantry grunt. The WGI grunt becomes disabled and rolls a Tough check and passes. It is no longer disabled, never made it to the boxed phase (and so will not trigger Snacking) and was never destroyed, and so it will not generate a corpse/soul/whatever token.

2. Dire Troll Mauler disables a Winter Guard Infantry grunt. The WGI grunt becomes disabled and rolls a Tough check and fails. It is now boxed. The Dire Troll Mauler didn't have any damage marked on it, so it doesn't heal, and thus doesn't remove the WGI grunt from play, and the WGI grunt is destroyed. It generates any appropriate tokens up on its destruction.

3. Dire Troll Mauler disables a Winter Guard Infantry grunt. The WGI grunt becomes disabled and rolls a Tough check and fails. It is now boxed. The Dire Troll Mauler had some damage marked on it, so it heals d3 points and removes the WGI grunt from play, and is never destroyed. It doesn't generate any appropriate tokens that depend on its destruction, or any other abilities that trigger on a model's destruction.

Just correcting, while you're correct that things that trigger on destruction don't occur, Vengeance specifically states "destroyed or removed from play by enemy attacks," so unless snacking is not considered part of the enemy attack it serves as a bad example.

Also of note, there are a few abilities, like Consume, which trigger the Remove From Play on Hit, skipping the damage steps completely.
