My friend wants to arc a spell through his node at my stealth unit. The node is within 5, the caster isn't. Can he do that?

Short Version: Yes, he can.

Long Version: Even if he wasn't within 5 inches, he can cast at the unit, it will just auto-miss and scatter if it is an AoE. As long as the Point of Origin of the attack is within 5 inches, you meet the pre-reqs to not auto-miss stealth targets.

Yes. Stealth does not prevent a model from being targeted...it just causes any attack that originates from greater than 5" away to automatically miss. The arc node becomes the spells point of origin, and since it was within 5" of the stealthed model it does not automatically miss.
